An air fryer works by circulating very hot air all around a food ingredient placed inside a closed space. The heat makes the outer surface of the ingredient dry and crispy while the keeping it's inside soft and moist. Unlike deep frying, the fat content of the ingredient remains very low.
A microwave works by bombarding electromagnetic radiation through food. The electromagnetic radiation polarizes molecules and makes them rotate along with the alternating microwave field. This causes them to hit against one another resulting in heat within the food. This heat cooks the food uniformly from inside.
From a taste point of view, the air fryer may be unacceptable to people who like the flavor of oil in food (deep fry). The air fryer may score over the microwave with respect to crispiness.
The air fryer consumes more energy and takes longer than a microwave for an equivalent amount of cooking.
